SALADS
Mixed Green Salad with Italian dressing
Spinach salad
Spinach, red onion, crushed walnuts, feta, and dried cranberries with
homemade maple roasted garlic balsamic vinaigrette.
DINNERS
Chicken Divan
Boneless chicken breasts, fresh broccoli, cream of chicken and cream
of celery soup, curry mayonnaise, grated cheddar cheese, herbed bread crumbs. Baked
and served with a side of rice, fresh vegetable and cranberry sauce. (student group
favorite)
Vegetable Divan
Mixed steamed vegetables topped with cream of celery and/or
mushroom soups, curry mayonnaise, grated cheddar cheese, herbed bread crumbs. Baked
and served with a side of rice, fresh vegetable and cranberry sauce.
Nita's Herbed Chicken
Boneless chicken breast breaded, topped with white wine, onion, butter and parsley sauce. Baked and served with a side of rice, fresh vegetable and cranberry sauce. (most popular chicken dish)
Chicken Parmesan
Breaded boneless chicken breasts, baked in marinara sauce, topped with mozzarella and Parmesan cheeses. Served with a side of pesto pasta mixed with vegetables.
Vermont Black Angus Beef
Sliced Sirloin au Jus served with twice-baked potato and fresh vegetable.
Pork Tenderloin
Tenderloin tips sautéed with mushrooms and onions, in a light white wine, parsley cream sauce served with rice and fresh vegetable.
Roasted Pork Tenderloin
With a cherry reduction sauce. Served with wild rice and ginger-parsley carrots.
Baked Salmon
Salmon filet baked with a lemon-dill sauce. Served with a side of red potatoes with fresh parsley and fresh vegetable.
Manicotti
Ricotta cheese mixed with ground beef, mozzarella, Parmesan, oregano and basil, rolled in fresh egg pasta sheet. Baked in marinara sauce and topped with grated Parmesan. Vegetarian version would replace ground beef with steamed broccoli or spinach.
Chicken and Vegetarian Burritos
make your own/ buffet style for smaller groups – Flour tortillas, Tacos, fried burger, sautéed chicken, mixed vegetables, black beans, refried beans, corn, Guacamole, cheddar cheese, sour cream and Green Mountain Gringo salsa. Served with a side of rice.
Eggplant Parmesan
Sliced eggplant breaded and grilled then baked in layers of sauce and mozzarella cheese. Served with a side of pesto pasta with mixed vegetables.
Lasagna
Layers of pasta, marinara sauce and a blend of ricotta, mozzarella and Parmesan cheeses with either mixed vegetables or beef. We also offer the vegetable lasagna with a side sausage marinara sauce.
Chicken and Veggie Stir-fry
Usually a buffet situation for smaller groups (15-25) with mixed veggies in a sweetginger, orange, tamari sauce, sautéed chicken, sautéed pork or beef, fried tofu, tempeh, whole grain rice.
BBQ
Huge buffet of burgers, dogs, sausage, veggie burgers, BBQ chicken breast, roasted potatoes, green salad, fruit salad, pasta salad, chips various other sides.
DESSERTS
Apple Crisp
Maple syrup sweetened tangy/tart apples from local orchards under a
yummy crisp served with vanilla ice cream
Mud Pie
Coffee ice cream in a chocolate cookie crust topped with warmed chocolate
sauce topped and whipped cream
Raspberry Mud Pie
All the above with frozen raspberries on top. (Pierce's Inn favorite)
Lemon Cake
Tangy moist lemon cake with a sweet lemon glaze (recipe from Silver Palate Cookbook)
Tiple Chocolate Brownie
Served with ice cream and chocolate sauce and whipped cream. (chocolate lovers will not be disappointed!)
Chocolate Cake
With vanilla or chocolate frosting, served with ice cream
Tiramisu
Early '90s Italian hit making a comeback! Mascarpone cheese custard filling on lady fingers with rum, espresso, dark chocolate shavings.
Angel Food Cake
With vanilla ice cream and chocolate sauce
Strawberry Short cake
Plenty of whipped cream and strawberries on a moist yellow cake (seasonal)
Strawberry-Rhubarb Crisp
This is the best flavor that the Creator put on this earth! Nothing touches the sweet and sour pleasure of Strawberry-Rhubarb sweetened with a little VT maple syrup. Served with vanilla ice cream (seasonal)

LUNCH MENU
All lunches are served with a homemade soup and a bountiful salad bar with homemade dressings! Additional side goodies include but are not limited to homemade pickles, hard boiled eggs, potato chips. All fruits and vegetables are fresh and we procure locally grown produce whenever possible.

Assorted Sandwiches and Soup
Grilled cheese, grilled ham and cheese, tuna and
egg salad. Cold cuts available as well.
Chicken Caesar Salad
Caesar Marinated Chicken, Romaine lettuce, croutons, mix
of Parmesan and Romano cheeses and creamy Caesar dressing.
Sesame Noodles and Baked Lemon-Rosemary Tofu
Somen noodles with
tamari, rice vinegar, toasted sesame oil and pan roasted sesame seeds topped with
vegetables with a side of baked lemon-rosemary tofu.
Bruce's World famous Pierce's Inn Chili
Top secret moderately spicy beef and/
or vegetarian chili. Served with cheese and sour cream as needed, as well as
homemade maple corn bread.
Orzo Salad with Feta and Roasted Vegetables
Orzo with red and yellow peppers,
eggplant, red onion, garlic, basil and pine nuts with a lemon sauce. Served warm.
Baked Tufu with Rosemary Marinade
Sliced tofu baked in Rosemary, lemon, balsamic and tamari sauce dressing. Served
with long grain rice.
Napa Valley ColesSlaw
Cabbage, shaved almonds, radish scallions, and cilantro with creamy soy ginger
cayenne pepper sauce.
Guacamole Salad
Ina Garten's famous spicy lime flavored guac salad with blackbeans, red onion and
lots of avocado.
